Every time I make it, it's a hit. Not only is it an aesthetically pleasing dish, it's one of those marinated salads that improves with flavor the longer it’s refrigerated .
Chick Peas aka Garbanzo beans ( 2 cans)
Red Bell Pepper (1)
Yellow Bell Pepper (1)
Green Bell Pepper (1)
Cherry Tomatoes (3/4 cup cut in halves)
Greek Black Olives (15 cut in halves)
Parsley (1/4 cup)
Feta Cheese (1/3 cup)
Mix them all together so it's nice and even. Next, you'll want to prepare your dressing. This part is what it makes it so tasty!
Extra-virgin olive oil (4 tablespoons)
Plain yogurt (2 tablespoons)
Freshly squeezed lemon juice (1 tablespoon)
Red wine vinegar (1 tablespoon
1 small garlic clove, minced
Ground cumin (1/4 teaspoon)
Salt and pepper, to taste
In a large bowl, toss together the salad ingredients. In a separate bowl, whisk together the dressing ingredients. Drizzle the dressing over the salad and toss. Transfer to a serving bowl and drizzle juices on top. Refrigerate until ready to serve.
